Sott’olio literally means under oil and describes the traditional way in which the Italian contadini, or peasant farmers, would traditionally preserve their vegetables for the winter in olive oil.
We buy our tomatoes from southern Italy from the DeCarlo family, but most of the Seggiano sott’olios come from the Angeli family near Seggiano on Monte Amiata.
All our sott’olios are preserved in extra virgin olive oil which is not only the tastiest oil, but the healthiest, due to its high level of monounsaturate fats.
